Dishoom
Edinburgh, United Kingdom

The three-story establishment on St Andrew Square is decorated in the style of Iranian cafes operating in Bombay in the mid-20th century. The interior design pays homage to Patrick Geddes, a Scottish botanist and urban planner who designed the spatial layout of cities in India at the beginning of the 20th century. The kitchen serves Bombay dishes: House Black Daal black lentils cooked for 24 hours, naan bread from the tandoor oven, and lamb biryani. In the evenings, the bar serves signature cocktails with spices.
