Oink
Edinburgh, United Kingdom
The eatery on colorful Victoria Street was founded in 2008 by farmers Sandy Pate and Adam Marshall from the Scottish Borders. The specialty of the place is whole roasted pork from free-range pigs raised on a Berwickshire farm. The meat is slow-roasted for several hours. Then the staff hand-pulls portions and serves them in fresh rolls with crispy crackling, apple sauce, or a portion of haggis. The whole roast can be seen through the window.
